The next dish is Shinogi "Mekabu Somen", which is a Japanese noodle soup. As the name suggests, the somen is kneaded with mekabu and served with myoga, sesame, ginger, and green onion. |
Red stars are red radishes. Green stars are melons. The Tanabata-inspired arrangement is wonderful. This dish is cool and appetizing. |

The simmered dish is black tongue flatfish with egg yolk sauce. The fish fillet is deep-fried and steamed, then covered with an egg starchy sauce. Awa no fusuma (Japanese raw wheat gluten) and sweet long shishito peppers assist the dish exquisitely. The aroma of thinly chopped yuzu (Japanese citron) is nice. |

The Tomezakana (side dish) is a plate of white shrimp and fresh yuba (yuba leaves). The white shrimp comes from Toyama. The fresh yuba is local. The square is a Tosa soy sauce vinegar jelly made from dashi konbu (kelp) and dried katsuo flakes (bonito). Vinegar is a combination of vinegar made by adding dashi broth and other ingredients and reducing the percentage of vinegar to the point where it is drinkable. This is a very refreshing dish. Hozuki (ground cherry), an edible plant from Aichi Prefecture, was also added as a garnish. |

Then the rice dish for the end of the meal served. On this day, it was takikomi-gohan (cooked rice) with octopus and edamame (green soy beans). |
The rice is "Yumegokochi" from Chiba Prefecture. Aka-dashi (red miso soup) is made with okahijiki, grilled green onion, grilled deep-fried tofu, and Japanese pepper powder. The pickled vegetables are homemade. On this day, there were four kinds. Kaga thick pickled cucumber, pickled radish with katsuo (bonito), celery with salted konbu (kelp), and watercress with olives, salt, and black pepper. |

Now it is time to have dessert. At "Hakone Ginyu", you can enjoy two kinds of desserts, "Kanmi (sweet dessert)" and "Mizugashi (fruit dessert)". Let's start with the Kanmi. A mizuyokan (sweet jellied dessert) made from homemade pineapple. It was served with brown sugar from Amami. |

Last is the "Mizugashi". Lemon sherbet is made with yogurt, milk, and sugar. Peanut mousse is made with peanut paste and whipped cream. Sponge cake is made with cinnamon. Watermelon and starfruit in honey were also served. White powdered sugar and alazan (sugar dragees) were made to resemble the Milky Way. |

These are the summer menu for July. Actually, the menu at the time of this interview was prepared by Hirotaka Murata, who had just become head chef that month. Nevertheless, he served us his best dishes. He has been supporting the cuisine of "Hakone Ginyu" for several years under the former head chef. He is sure to express his own ideas more and more in the future. The inn with the most difficult reservations in Japan is also the inn with the most repeat guests in Japan. The menu is a perfect example of the essence of satisfying such guests. The special order dishes are also well-received. The stone-roasted fillet of Ashigara beef and the lobster sashimi are said to be particularly popular. |
