Dinner at "Hakone Ginyu" is basically served in your room, as each room is equipped with a dining room.
Dinner is a course meal based on Japanese cuisine.
The menu changes monthly.
Here is the menu at the time of the interview (early July).
The title of the course is "Wish Upon a Star".
First, an aperitif drink, "Odawara Lemon Wine" was served.
The starter was "Hamokko Hitashi" soaked pike conger eel roe.
Hamokko means pike conger eel roe.
Accompanying the dish were goya (bitter melon) from Okinawa, itouri (dishcloth gourd) from Okayama, santousai (santonese greens) from Saitama, and kushinsai sprouts (sprouts of water spinach) from Nagano.
And cherry tomatoes and small shiso from Aichi.
A dish that is very summery.

Appetizers are lively and festive.
The roast beef is local Ashigara beef.
The jelly made with soy sauce, mirin, and katsuo dashi (bonito soup stock) is crystal salmon.
French foie gras and local green beans.
The foie gras is soaked in water for two days to remove the salt.
Marinated summer vegetables with yellow zucchini, Shonan red (onion), and green pepper in a medium tomato.
On top was fresh green seaweed.
The fried small eggplant was served with country miso.
A delightful mix of Japanese and Western dishes.

Appetizers (roasted Wagyu beef, crystal salmon, foie gras and green beans, marinated summer vegetables, deep-fried small eggplant with country miso)
The next dish is a clear soup dish.
The corn bean dumplings are made by mixing corn with grilled sea bream and raw sea bream.
Summery junsai (water shield) from Akita Prefecture provides the perfect accompaniment.
Miniature okarenkon (lotus roots) from Kochi were also served with the dumplings. Okarenkon is another name for okra.
The wasabi was a nice accent.

Tuna is medium fatty tuna.
Stone flounder and tiger prawns come from Sagami Bay.
Hamo (Japanese conger eel) comes from Kyoto and hokki-gai (surf clam) comes from Manazuru.

Here comes the bouillabaisse wrapped in magnolia leaves.
Gindara (sablefish) comes from the port of Odawara.
Tiger prawns, hard clams, and short-necked clams are from Manazuru.
Scallop is from Hokkaido.
Snow crab is from Ishikawa.
Mussels and yellow bell peppers are imported.
Snap peas are from local.
Asparagus is from Nagano.
Western-style dish (bouillabaisse) 1 The soup is in the form of thick starchy sauce.
The broth is made from 12 different ingredients, including sea bream bones, sole bones, dried shrimp, and dried scallops.
Not forgetting to add onions for sweetness.
It is also good served with homemade saffron mayonnaise. There were chopped shallots in there.
