The head chef of this inn is Mr. Kiichi Kishinami. The chef, a native of Shirakawa City, Fukushima Prefecture, worked at Japanese restaurants in Taito-ku, Roppongi, and Kameido in Tokyo. He also worked at the famous Matsubaya restaurant in Akasaka for eight years. After that, he worked at a hot spring inn in Yamanashi Prefecture before coming to "Kannon Onsen". He serves both sea food and vegetables from homegrown gardens, and he tries to make the best use of these ingredients. At dinner that night, we were served fresh tomatoes from their own garden as extra dishes. Although it was not on the menu, this tomato was fresher than I had imagined, and I enjoyed it as if it were dessert. |

On the mountain at the back of the accommodation buildings, there are plastic greenhouses where vegetables are cultivated. The largest of these is a 30m x 30m tomato greenhouse. For the cultivation of high quality species, energy from solar power generation is used and ground heating is utilized. The above-mentioned tomatoes have become a specialty of this inn due to their taste, and can be purchased as souvenirs. |

In addition to tomatoes, there is a wide variety of vegetables, and with the cooperation of local farmers, they are growing as many as 300 varieties of vegetables. All of them are grown using only mineral-rich hot spring water. Although the crops grown vary depending on the season, corn, snap peas, green peppers, and miniature pumpkin puccini were among the vegetables being grown. |

The wasabi, which grows only in clear water, is also cultivated here on the grounds of "Kannon Onsen". It will be served at dinner, and you can look forward to its high fragrance and sweetness that can only be tasted fresh. |

Breakfast is also served in the dining room. The menu here is standard Japanese food, but the quality of the ingredients, such as freshly picked vegetables, shines through. On this day, the menu included dried horse mackerel, tofu (handmade every day), fried eggs, small tuna, kamaboko, wasabi (wasabi from Amagi), homemade vegetable salad (tomato, bell pepper, cucumber, lettuce, Japanese soy sauce dressing), shinodamaki, shiokara (salted fish), homemade pickled plums, vegetable sticks (carrots, cucumbers, and radishes with moromi miso), and grated whitebait were all on the menu. The rice was from Gunma Prefecture, the president's hometown. The miso soup was a luxurious dish with Ise lobsters, and the aroma of the sea was irresistible. Fruits were pineapple and orange. Tomato juice, which is seasonal, is also served. It has a fresh sourness and sweetness without any peculiarities, and I was even impressed by its taste, which is completely different from ordinary tomato juice. |

The breakfast in the main building is also a well-structured breakfast, featuring fresh horse mackerel, sashimi of squid, homemade konnyaku, freshly picked tomatoes, homemade tofu, hot spring eggs, and nori (seaweed). The menu also includes Gunma-grown rice and miso soup with Ise lobster broth. Soak in the hot spring to regain your health, then enjoy a delicious breakfast before leaving the inn. |

Cuisine Reports
Meals are basically served at the "Shikisai" dining room on the first floor of the new "Pygmalion" building, no matter which guest room you are staying in. From the center corridor to the left are 44 seats in a horigotatsu-style tatami room. To the right is a large tatami room for guests of the main building.....
