| The menu is "Country granny's food," which the landlady herself creates and sometimes prepares herself. The dishes are imagined to be the taste of home, and are simple and tasty rather than elaborate, making use of the best ingredients as they are. Of course, the menu is vegetable-centered and healthy, as it is composed mainly of seasonal produce, but they also have a strong focus on meat. The landlady herself goes to the market and serves only the finest quality food, which she personally inspects with her own eyes, so if you think it is just a mountain inn's cuisine, you will be betrayed, but in a good way. This commitment, after all, seems to be well accepted by many women. The menu at the time of the interview is as follows. For an aperitif, Japanese plum wine. This is homemade and has a deep taste and aroma that cannot be found in ready-made products. Appetizers are served in baskets of small bowls of locally produced and consumed food. Not only do the dishes make full use of the flavors of the ingredients, but they are also carefully arranged to be pleasing to the eye. It is a pleasure to be able to enjoy a little bit of Kumamoto Prefecture's unique local cuisine, such as mustard-flavored lotus root. |

| The grilled dish is Higo beef roasted on a hoe. This original dish was conceived because the landlady's family is an ironworker, and on this day was served with Higo beef ribeye, shiitake mushrooms, local cabbage, green peppers, onions, and pumpkin. This Higo beef has not so much fat, but it melts into surprisingly soft and melts in your mouth, making you burst with emotion. High-quality ingredients are best enjoyed straight from the source, without much additional work. Although a special sauce is available, we recommend simply eating the meat with rock salt and pepper. |
