Next is the "Roast pork", which is served as a "salad". It is a salad, but the roast pork is the main ingredient. The sour dressing goes well with the roast pork.

The final dish is a rice dish "Yamagata's pride rice", "Yamagata's pickles" and a bowl of "Aosa seaweed in a low-salt miso broth". The rice was freshly cooked, premium brand rice called "Tsuyahime". As one of Japan's leading rice-producing regions, the rice is outstandingly delicious.

Dessert is a mizugashi, "Pudding with seasonal fruits". The green tea flavored pudding is served with caramel syrup. It has a strong sweetness, but is balanced by the apples and strawberries served next to it.

These are the dinner menus we covered this time. The menu makes full use of Yamagata's seasonal ingredients, and each dish is packed with local flavors. Both quantity and quality are sure to satisfy.

Example of Arimakan cuisine
The head chef of this inn is Mr. Masayoshi Nakano. He used to manage a Japanese restaurant in Miyagi Prefecture, but lost his restaurant in the Great East Japan Earthquake of March 2011 and came to work at "Arimakan" by chance. He has a strong desire to serve the traditional cuisine of the local area. The menu was a testament to the skill of the chef, who not only has an aesthetic eye for selecting ingredients, but also has the ingenuity to enhance the flavor of the ingredients. Since Mr. Nakano became head chef, the cuisine at this inn has become even more impressive. |
