| The steamed dish is "Hasu-mushi". The "hasu" means lotus root, and is one of the Kaga dishes. It is a mixture of grated lotus root, kikurage mushrooms, and sakurafu, which is deep-fried and steamed. The refined sauce, shishito peppers, and green onions are delicious. |

In between the teppanyaki menu, we were served a refreshing seasonal vegetable salad. We were treated to baby leaves and new onions, bell peppers, mini-tomatoes, and plenty of other vegetables to freshen up our palates. Then came the garlic toast. The savory garlic aroma whetted my appetite anew. |

| Next, we were served the main meat dish on the teppan-yaki grill, the "Kumamoto Akage Wagyu Sirloin Steak". It is a breed of "Aka-gyu" beef produced in Aso, which has less fat than Kuroge Wagyu and is good for those who want to enjoy a steak with a healthy taste. However, it should be noted that this is a very rare breed of Wagyu beef, with only a small production. |

| The "Aka-gyu" breed is always released into vast grasslands under strict prefectural control, where it is exposed to plenty of sunlight and grows on a natural diet of grass. The beef is also known to contain high levels of "Taurine," a type of amino acid, in the lean part of the meat. Taurine is said to improve liver dysfunction caused by alcohol and lower blood pressure. It is probably to say that this is the healthiest Wagyu beef in Japan. Eat it simply with rock salt and wasabi soy sauce. |
