「益成屋」の食事は、基本的に客室に近い個室の食事処でいただくことになる。
ただ、客室6室に対して食事処が5室しかないので、満室の場合は1室のみ部屋食になるというわけだ。
いずれにせよ、他の客と顔をあわさず、ゆったりと食事ができるのはありがたい。

ここで取材時11月の夕食のメニューをご紹介しよう。
料理長は、この宿の社長である内堀将照さんが担当している。
ご本人曰く「懐石料理ではない」とおっしゃるが、基本は和食の手のこんだ料理が饗される。
群馬県産の食材にこだわった料理は以下の通りだ。

自家製のしそ酒。紫蘇のほのかな香りが食欲を誘う。時季により、りんご、なし、かりん、くこのみ、朝鮮人参などもあるとの事。
先付けの一つ目は、花豆の煮豆。花豆は嬬恋産。柔らかく煮込んであった。
もうひとつの先付けは、自家製のゴマ豆腐。コクがあり、舌の上でとろける。
お造りは、マグロ、イワシ、イカ。なじみの魚屋さんから仕入れているという。草津という山の中ながら新鮮なお刺身だった。
鍋物は、上州牛のすき焼き。オリジナルの割下が絶妙。極上の上州牛とともに、白菜、下仁田ネギ、春菊、焼き豆腐、下仁田糸こんにゃくなどの地野菜が、味を引き立てる。玉子は、標高1100mの浅間高原で充分に運動した放し飼いのニワトリが産んだもの。
蒸し物は、岩魚ワイン蒸し。バターと白ワインで味を調え、岩魚を玉ねぎといっしょにホイルで包んで蒸す。玉ねぎの甘さが岩魚に染み込み美味しい。
揚げ物は、小茄子のエビ挟み揚げ。高知産の小茄子とエビの相性は抜群。地のシシトウ、銀杏を揚げたものも一緒に添えられていた。青海苔を混ぜた塩につけていただく。火で冷めないようにしている心遣いも嬉しい。
煮物は、大根の挽肉餡かけ。豚の挽肉のあんと一緒にいただく地元産の大根も、味がよく染み込んでいる。
焼物は、自家製グラタン。いわゆる洋皿がここで登場。マカロニ、鶏肉、玉ねぎが入っていた。
酢の物は、なめこ、きゅうり、そして大根おろし。さっぱりと舌をリセットしてくれる。
凌ぎとして、手打ち蕎麦の山がけ。会長さん(先代社長)自ら打つお蕎麦。
締めは、新潟産コシヒカリのご飯に、三つ葉とまりふとゆずのお吸い物と香の物が付く。
水菓子(デザート)は、柿。とても甘かった。

朝食は1階の「押し花アートギャラリー」にていただくことになる。
朝食の献立も手を抜いていない。
地元草津の豆腐屋さんのすくい豆腐が美味しい。
だし巻き玉子の味もなかなかのもの。
他に、もやしのナムル、切り昆布の煮物、コンニャクのピリ辛煮、チャーシュー付サラダ、焼のり・・・と揃う。そして新潟産コシヒカリのご飯と、温かいなめこと豆腐の味噌汁。さらに自家製の香の物が付く。 魚は無かったが、バランスの取れた献立と言えるだろう。
